INGREDIENTS

For the steak-Ribeye steak or cut of choice-Kosher salt -Black pepper-Beef tallow or neutral oil-2 tablespoons unsalted butter-1-2 garlic cloves-2 sprigs fresh thyme or rosemary

For the frites-Russet potatoes-Duck Fat, Beef Tallow, or Neutral oil (for frying)-Flakey salt

For the green sauce-1/2 cup unsalted butter-1 medium shallot-3 tablespoons fresh tarragon-3 fresh parsley-4 fresh sage leaves-1 tablespoon capers-3 to 4 anchovy fillet
