PAVLOVA

INGREDIENTS

For the base: -4 large egg whites -220 g sugar -2 tsp cornstarch -1 tsp white vinegar or lemon juice -1 or 2 tsp vanilla extract -1 pinch fine salt -360 ml heavy cream -2 to 3 Tbsp powdered sugar -1 tsp vanilla paste or extract

For the cranberry coulis: -100 g fresh cranberries -1/2 cup granulated sugar -1/2 cup water

For the cranberry and rosemary topping: -150–200 g fresh cranberries -120 ml water -200–250 g granulated sugar -4–6 small rosemary sprigs
